2 teaspoons dried mustard, or 1 tablespoon prepared mustard
1 tablespoon cider vinegar
salt and ground black pepper, to taste
optional: 1 dash hot pepper sauce
optional: 2 tablespoons fresh chives or dill, finely chopped
Follow instructions for hard-boiled eggs using 6 prepared Eggies® and cool completely.
Remove cooked eggs from Eggies®. Slice about 1/4-inch off of flat end of egg to expose yolk. Place the egg flat side down and cut off a thin slice of the rounded end. Turn egg over with flat end facing up. Gently remove yolks and place in a medium bowl.
Mash together with mayonnaise, mustard, vinegar, chives, salt and pepper, and hot pepper sauce, if desired. Add additional mayonnaise for a softer texture. Puree in food processor if piping.
Gently stuff or pipe the egg white halves with the egg yolk mixture. Sprinkle eggs with paprika, and garnish with additional herbs. Chill covered in the refrigerator until serving.
